Middle eastern vacation...any tips?

my family is planning a trip to istanbul, jerusalem, and cairo next christmas. any ideas on things to see that may be off the beaten path? we would like to fly in and out of istanbul, so how many days should we allot to each city? we like to be on the move constantly, like we saw rome in 3 days..
